Sorry I missed posting a day. I'm getting down to the wire on this book, and I'm seriously pressed for time. But here's yesterday's menu:
Breakfast:
Pan-grilled pork steak with Creole seasoning
Lunch:
Chicken and Smoked Gouda Salad. This was HUGE -- enough for two people, really. It contained:
4 cups romaine
4 cups red leaf lettuce
about 1/4 cup thin-sliced red onion
1/4 cup shredded smoked gouda
a couple of strips of bacon, cooked and crumbled
A good 6-7 ounces of grilled chicken breast
Apricot-Mustard Dressing
Apricot-Mustard Dressing
1 tablespoon low sugar apricot preserves (I use Smucker's)
1 tablespoon apple cider vinegar
1 tablespoon olive oil
1 tablespoon light mayonnaise
1 teaspoon brown mustard -- or dijon
1 teaspoon splenda
1/8 teaspoon pepper -- scant
1 pinch salt or Vege-Sal
Just mix everything together. That's it! Good as a dipping sauce, too.

The whole batch has: 185 Calories; 17g Fat; trace Protein; 8g Carbohydrate; trace Dietary Fiber
Plus I ate an extra slice of bacon that I cooked while making the salad.
Snacks:
A handful of almonds
Sugar-free dark chocolate
Sugar-free peanut butter cup
Dinner:
We didn't have a regular dinner. I was trying out a baked brie-and-romano dip recipe, so we had that on Fiber Rich crackers, while watching a cheesy old horror movie on DVD. The dip wasn't as good as I'd hoped, so I need to rework the recipe.
Beverages:
Tea
Sparkling Water
Cider-Ade
Dry Red Wine
Daily totals: 1538 Calories; 77g Fat ; 88g Protein; 65g Carbohydrate; 25g Dietary Fiber
