Daily Menu January 3rd, 2008

Breakfast:

Mushrooms, onions, and snipped chicken livers, sauteed in butter, with three fried eggs on top. I never did this before, and it was so good it was ridiculous! (Of course, I'm inordinately fond of chicken livers.)

I decided I just had to add the recipe for this!

Eggs on a Bed of Mushrooms, Onions, and Chicken Livers.

3 mushrooms, sliced
1/2 medium onion, sliced
1 tablespoon butter,divided
1 clove garlic, crushed
2 chicken livers
3 eggs
salt and pepper -- to taste

Slice your mushrooms and your onions. Coat your medium-sized skillet with non-stick cooking spray, and put it over medium heat. Melt a third of the butter (a teaspoon or so) and start sauteing the mushrooms and onions together.

While that's happening, crush your garlic, and cut your chicken livers into bite-sized pieces (I use my kitchen shears for this.) Remember to stir your mushrooms and onions!

When the onions are translucent and the mushrooms have softened and changed color, add another teaspoon of butter. Now stir in the garlic and the chicken livers. Saute, stirring often, until the red is gone from the chicken livers, but there's still a little pink -- nothing is worse than overcooked liver! Salt and pepper quickly. Now remove the whole mixture to a serving plate, and put a pot lid over it to keep it warm.

Okay, wipe your pan quickly with a paper towel (don't burn yourself!) Spray it again, put it back on the heat, and throw in the last teaspoon of butter. Crack in your eggs. Cover the pan, and let 'em fry for a few minutes, then uncover. Chances are that the tops of the whites will still be gooey. Add a teaspoon or two of water to the pan and re-cover it. The steam will cook the tops without your having to flip the eggs! Cook to your preferred degree of doneness -- I like the whites completely set, but the yolks still pretty runny. Us a pancake turner to transfer the eggs to your plate, right on top of the mushroom mixture. Salt, pepper, devour -- and prepare to not be hungry again for a good 5 hours.

1 handful tortilla chips someone left at my house after a Christmas party. I need to send them to work with my husband!

Late Lunch/Supper

Roast chicken thighs and coleslaw again. Hey, cabbage was cheap this week, I had chicken in the freezer, my husband wasn't home for supper -- he was out watching the Iowa Caucus returns with the other political animals -- and I've got a book to turn in in three weeks!

Beverages:

Tea
"Cider-ade" -- sweetened apple cider vinegar in ice water, which is a lot better than it sounds.
Sparkling water
Dry red wine
