Got any Leftovers?

I roasted a huge honkin' leg of lamb just for That Nice Boy I Married and me. Accordingly, I am up to my armpits in leftover lamb! I had a Leftover Lamblet for breakfast -- the recipe is in 500 Low-Carb Recipes, though I pretty much winged it:

Put a few big chunks of leftover lamb -- about a quarter-pound -- in the food processor, and threw in a quarter of an onion. (The book says a half a small onion, but I didn't have a really small one.) A big dollop of mayo -- a few tablespoons -- a little horseradish, and a couple of tablespoons grated Parmesan. Grind it all together, and use it as an omelet filling. YUMMY!

And tonight I'll make Shepherd's Pie. Real Shepherd's Pie, from lamb, not hamburger.

But most of you are dealing with leftover ham. So here's one more recipe -- and it uses up leftover ham and hard-boiled eggs:

Ham Kedgeree

Kedgeree is traditionally made of rice and smoked fish, but it's just great with cauli-rice and leftover ham. Try it!

1/2 head cauliflower
3 tablespoons butter
1 tablespoon curry powder
2 cups ham cubes
4 hard-boiled eggs
3 tablespoons minced onion
1/4 cup heavy cream
salt and pepper
1/4 cup chopped fresh parsley

Run the cauliflower through the shredding blade of your food processor. Put it in a microwaveable casserole with a lid, add a couple of tablespoons of water, cover, and microwave on high for 6 minutes.

While that's happening, cut your ham in 1/2" cubes, mince your onion, and peel and chop your eggs coarsely.

Melt the butter in your large, heavy skillet over low heat, and add the curry powder and onion. Saute them together for 2-3 minutes. Add everything else, stir gently but thoroughly (gently so that you don't completely pulverize the hunks of egg yolk,) heat through, and serve.
