My Super Yummy Breakfast!

Just call me Breakfast Girl! I need lots of food in the morning. The whole notion, pushed by the Special K people, that a good breakfast has just 200 calories or whatever, makes my blood run cold. Breakfast really is the most important meal of the day -- it governs our hunger and energy for the rest of the day -- so why shouldn't we eat a third of our daily food intake then?

Today I had a super-yummy breakfast that was also quick and easy, so I thought I'd tell you about it.

I shredded a handful of Monterey Jack, and sliced half an avocado -- I just happened to have a perfectly ripe one on hand. (I also have an avocado slicer. I'm not big on single-use kitchen gadgets, but this one does a usually messy job so easily and perfectly, I make an exception.) Chopped a little fresh cilantro. I didn't have any salsa on hand, but I do have some leftover sauce from some good Mexican-style slow-cooker chicken I did a week or so back, and it's been good on omelets, so I figured it would be good here; I got that out, along with the sour cream and the eggs.

Okay, time to cook! I put my 8" skillet over medium heat, and got it good and hot. While that was happening, I laid a low carb tortilla on a plate, and spread the shredded cheese on it. Stuck it in the microwave for a minute at 6 power. I cracked a couple of eggs and scrambled 'em up. The cooking part took all of a couple of minutes.

I grabbed my warm tortilla with melted cheese, and arranged the eggs down the middle. Topped it with four slices of avocado, the cilantro, a spoonful of the sauce -- salsa would be fine -- and a few dollops of sour cream. And voila! A breakfast burrito as good as anything you could get at a Mexican restaurant.

I then stuffed it in my face.

I had some leftover avocado slices and the second, unsliced half of the avocado. I coated them lightly with lime juice, threw them in a zipper-lock bag, sealed it most of the way, then sucked out the air and finished sealing it. They should be good for a couple of days. I should do this again tomorrow!
