Daily Menu January 8th, 2009
Breakfast:
Bacon
Portobello mushroom, onion, and Monterey Jack omelet
Lunch/Snack
Roasted chicken wings (ate seven of these -- whole ones, not "drumettes" -- over the space of several hours.
Dinner:
Ham, Cheese and Broccoli Puff -- a version of the egg casserole I've written about in the past.
(In case you missed it, the basic recipe is 6 eggs and 1 cup cottage cheese. You whisk these together with whatever seasonings will fit the filling you've chosen; in this case I used 1/2 teaspoon Vege-Sal, 1 teaspoon dry mustard, 1 tablespoon prepared horseradish, and 1/4 teaspoon mustard.
Pour half of this into an 8x8 baking dish you've coated with non-stick cooking spray. Layer in the filling -- I used a little over a cup of ham cubes, a pound of frozen broccoli "cuts" -- smaller than spears, but bigger than chopped broccoli -- and a cup of shredded cheddar. Top with the rest of the egg mixture, and bake for about 1 hour at 325, or until puffed and golden.
This recipe lets you use up all kinds of leftovers, or make a meal out of eggs and a can of tuna. Reheats brilliantly, too -- That Nice Boy I Married took some for lunch today.)

Notice how my calorie count has crept up the past couple of days -- again, my appetite is balancing itself.
