Dreamfield's

I've written about Dreamfield's pasta before, but new folks come by all the time, and I recently had an inquiry. So here's the lowdown:

I bought one of your cookbooks and I just love it. New hope for a life of low carb.

My question is about the Dreamfield pasta. Is it really only 5 carbs per serving, or would I be better off not eating it. I am still in the losing stage and dont want to ruin my weight loss. Hope you have time to answer. Thanks so much.

I don't completely trust Dreamfield's. I've done blood sugar tests on myself, starting with a fasting blood sugar reading, then eating Dreamfield's, and taking my sugar again every fifteen-to-twenty minutes for 2-3 hours. (And boy, does it make my pinkies hurt.) Dreamfield's raises my blood sugar too much for me to be absorbing only 5 grams of carbohydrate.

I've heard a lot of varying reports on Dreamfield's; some people find it raises their blood sugar very little, others have the same experience I did. Still others find that their blood glucose readings from Dreamfield's vary, sometimes jumping a lot, sometimes almost not at all. Many report that so long as they eat a small serving, along with plenty of protein and vegetables, they're okay, but eating the stuff alone is problematic.

I will say that my blood sugar has never risen as high from Dreamfield's as it does from standard pasta, so there does seem to be some benefit to their process. Still, we eat it only occasionally (every few months) and then generally as a side dish, with plenty of protein and veggies. More commonly I use tofu shirataki if I want noodles. They really are low carb. Expensive, but low carb.
