New Salad for Lunch!

Had some stuff in the house to use up, so I made a really great new salad. I'm calling it

Sun-Dried Tomato and Turkey Club Salad

3 slices bacon
1/2 head cauliflower
3 scallions
1/2 cup sun dried tomatoes (I used oil-packed, but I bet the dry pack would work fine)
4 ounces sliced turkey breast
1/3 cup mayo, regular or light (I used light)

Lay your bacon on a microwave bacon rack or in a glass pie plate, and stick it in the microwave on high. Mine takes about 3-3 1/2 minutes to cook crisp.

In the meanwhile, trim the leaves and the very bottom of the stem off your cauliflower, whack it into chunks, and run it through the shredding blade of your food processor. Put the resulting "cauli-rice" in a microwaveable casserole with a lid, add a couple of tablespoons of water, swap it out for the bacon, and nuke on high for 6 minutes.

Slice your scallions, including the crisp part of the green shoot. Chop up the sun dried tomatoes. Cut your turkey into bite-sized bits.

When the microwave beeps, pull the cauliflower out and uncover it right away, to let out the steam and stop the cooking. Let it cool for a few minutes, stirring now and then to let the heat out.

Now stir in everything -- scallions, tomatoes, turkey, the bacon, which you'll crumble, and the mayo. You can eat it right away -- it's nice warm -- or chill it. If you chill it, you can make a pretty serving by packing it into a custard cup, then unmolding it on a bed of lettuce.

Three servings. Made with light mayo each will have: 207 Calories; 12g Fat; 14g Protein; 12g Carbohydrate; 4g Dietary Fiber; 8 g usable carb

Made with regular mayo, each will have: 321 Calories; 27g Fat; 14g Protein; 10g Carbohydrate; 4g Dietary Fiber; 6 g usable carb
