Pretty dull food day yesterday, mostly leftovers. One thing I find interesting: I ate considerably fewer calories on Wednesday than I did on Tuesday, about 800 calories less. I've seen this pattern several times. What this tells me is that my body is maintaining a long-term balance in food intake; if I eat a little more one day, I automatically eat a little less the next, because the food I eat actually quells my hunger. This happens automatically for me, so long as I keep my carb load low. Pretty cool.

Breakfast:

Leftover roasted chicken leg-and-thigh
Leftover coleslaw

Lunch --

Leftover meatloaf

Snacks --

2 Finn Crisp crackers with butter
Raw carrot
Sugar-free dark chocolate
Sugar-free Reese's peanut butter cups

Dinner --

Orange-glazed roast pork brisket

Beverages:

Tea
Sparkling water
Dry red wine

Daily totals: 1615 Calories; 94g Fat; 80g Protein; 45g Carbohydrate; 17g Dietary Fiber; 28 grams usable carb.

About those pork briskets -- these have been showing up in my grocery store recently. They appear to the the edges of slabs of spare ribs. These briskets run a good buck-a-pound cheaper than ribs, no doubt because they have quite a lot of cartilage in them. But the meat is very tasty, no different from pork spare ribs. So I buy them whenever I see them.

Last night I slow-roasted them. I lay them on a rack in a pan, sprinkled both sides with salt and pepper, and gave them a couple of hours, maybe a little more, at 285. In the last half-hour or so, I basted them a few times with a mixture of:

2 tablespoons Smucker's low sugar orange marmalade
2 tablespoons lemon juice
1 tablespoon Splenda
1 teaspoon soy sauce
1 clove of garlic, crushed
1/4 teaspoon chili garlic paste

I made this glaze up on the spur of the moment, but it was good enough that I'd do it again. This would be good on chicken, too.
