Recipe: Pot de Chocolate

During the last couple of weeks before my deadline on 500 Paleo Recipes I not only let my blogging slide, but became uncharacteristically quiet on Facebook. I promised my Facebook fans this recipe in return for their patience -- this is from the upcoming book.

Pot de Chocolat

Very easy. Very, very good.

1 1/2 cups unsweetened coconut milk (this is roughly what's in 1 can)
6 ounces bitter chocolate
2 tablespoons honey
20 drops chocolate liquid stevia
2 egg yolks

In a saucepan, over low heat, warm the coconut milk and the chocolate together till the chocolate is completely melted and the coconut milk is steaming. Whisk this together, right there in the pan.

Pour this into your blender, and turn it on. Now add everything else, and let the blender run for about 5 minutes.

Pour into little teeny cups -- I used little Chinese teacups. This is very rich, so servings should be quite small. Chill for 6-8 hours.

Garnish with a raspberry, or perhaps a strawberry fan, or a mint leaf, should you be feeling spiffy. Though I doubt anyone will turn this down ungarnished.

8 servings, each with: 225 Calories; 22g Fat ); 4g Protein; 12g Carbohydrate; 3g Dietary Fiber; 9g usable carb.

NOTES : This analysis assumes you're using real honey -- the hardcore paleo choice. I actually used sugar-free imitation honey from HoneyTree. My best analysis tells me you can knock two grams of usable carb off each serving if you do likewise.

You can play with this, if you like. Use vanilla or toffee flavored stevia or add a few drops of pure peppermint oil, or a tablespoon of dark rum. Maybe a half-teaspoon of orange extract? Have fun.
