Egg and Cottage Cheese Pancakes

My nephew Henry and niece Halliday came to visit this week. I invented these pancakes for them, and they loved 'em.

Egg and Cottage Cheese Pancakes

6 eggs
1 cup cottage cheese
2 tablespoons Stevia in the Raw (or other sweetener to equal 2 tablespoons of sugar)
1 1/2 teaspoons baking powder
1/3 cup coconut flour
1 teaspoon vanilla
1/4 cup vanilla whey protein powder
1 tablespoon butter -- or as needed

Simply assemble everything but the butter in your blender, and run until you have a smooth batter -- you may want to scrape down the sides of the blender once or twice. Now, let your batter sit for a few minutes -- it will thicken a bit on standing. In the meanwhile...

Put your biggest skillet or a griddle over medium heat -- I use my huge skillet that goes across two burners. Let it get hot before you try to cook your pancakes.

I used a tablespoon of butter to grease my hot skillet even though it's got a good non-stick surface. Then simply pour the batter out of the blender onto the hot skillet or griddle, and fry the way you would any pancakes.

You can serve these with butter and sugar-free pancake syrup if you like, but I prefer low sugar preserves. A little Splenda mixed with cinnamon is nice, too.
